Steam Beer – also known as California Common beer uses lager yeast but is fermented at Ale temperatures. This recipe comes from The Complete Joy of Homebrewing "The Sun Has Left Us on Time Steam Beer"
½ lb. crystal
Bring these grains to a mash (steep) temperature of 160-170 deg F. Hold 15-20 mins
Bring 1 gal of water to a boil in the brew pot.
Sparge grains with cool water into brew pot
Add 6.6 lbs. light malt extract
Optional - add 1 lb. honey
Boil with 2 oz Northern Brewer Hops 40 mins
Add 1-TSP Irish moss - 5 mins
Add to water in carboy, cool, add larger yeast
